Anyway, to the recipe...
Crepes
1 cup flour
1 pinch salt
3 eggs, lightly beaten
1 1/4 cup milk
2 tsp. melted butter
Cooking spray or olive oil
For our family, we need to make at least 3 batches. (*Note: Three batches makes about 25 crepes) Our blender only holds 2 batches. I typically blend the ingredients and then dump the batter in a big mixing bowl.
Step #1: Put all ingredients in the blender and blend until all ingredients are incorporated. The batter will be really runny, but that's how it is supposed to be.
Step #2: Next, place a small frying pan over medium heat. Heat the pan before you put the batter in it.
Step #3: Cover the bottom of your pan with a little olive oil or non-stick cooking spray. Ladel just enough batter to cover the bottom of the pan. Let the crepe batter sit until the edges of the crepe begin getting golden brown.
Step #4:With a rubber scraper, gently loosen the sides of the crepe and flip it.
Step #5: Take crepe out of the pan and place on a cooling rack.
Now, every crepe has to have fillings! The site we based this recipe from suggested a lemon curd filling with a blueberry topping. We just got some canned fillings from the store, and they were really good! I made some crepes with lemon filling and blueberries on top, and I made others with nutella filling.
They were delicious!
