Happy Mother's Day! 

Happy Mother's Day everyone! I am sorry that this post is so late, but we've had a very busy week, and I just managed to get all of the pictures/recipes uploaded. I am going to put all of the recipe links in the post, so if you would like to see the recipe for something, click the name of the recipe. 
 We made a Mother's Day fruit arrangement with Mom.
 We put together a gift bag for Mom with some presents from all of us.
 For breakfast I made some Oatmeal Waffles with Orange Honey Butter
For dinner Dad and I made some Greek Chicken Pitas with Tzataziki Sauce
 The pita pockets were filled with grilled chicken, roasted tomatoes and onions, cucumber tzataziki sauce, fresh lettuce, and feta cheese.
For dessert I made an Oreo Layer Dessert.

Oreo Layer Dessert By: Siobhan

~Oreo Layer Dessert~

This is a delicious dessert that I made for Mother's Day. It is very simple and perfect for any chocolate lovers! This recipe is adapted from The Brown Eyed Baker blog.
Ingredients

  • For the Crust:
  • 1 family size package Double Stuff Oreo Cookies
  • 1/2 cup butter melted and slightly cooled
  • For the Cream Cheese Layer:
  • 8 ounces cream cheese
  • 1 cup powdered sugar
  • (8-ounce) tub Cool Whip
  • For the Pudding Layer:
  • 1 (5.1-ounce) box instant chocolate pudding
  • 3 1/2 cups milk
  • For the Topping:
  • (8-ounce) tub Cool Whip
 Begin by crushing the oreos with a rolling pin in a ziplock bag. Put aside one half of the bag, and dump the rest into the bottom of a 9x13 pan.
 Drizzle melted butter over the oreos and press them into the pan. Make sure that all of the crumbs are moistened Put the pan in the fridge while you make the cream cheese layer.
Beat the cream cheese on medium speed until light and fluffy (3 minutes) 
 Turn down to medium-low and add the powdered sugar. Increase to medium and beat for 30 seconds.
 Fold in 8 oz. Cool Whip with a spatula.
 Spread cream cheese layer over the oreo layer. Refrigerate while you make the pudding.
 Whisk together the pudding and milk and spread over the cream cheese layer with an angled spatula.
 Top with the remaining Cool Whip and oreos.
Chill at least 2 hours before serving.
