Happy 4th Birthday, Brandan!! (Siobhan)

~Happy Birthday Brandan~

Happy Birthday, Brandan!! You are the smartest, sweetest four year old I know. You are the best baking buddy, and I'm going to miss you so much when I go to Covenant this fall. I love you, Brandan, and I hope you had the best birthday ever!
To celebrate Brandan's birthday, Mom took him on a Winnie the Pooh Trail Walk. He had a lot of fun exploring the 'Hundred Acre Wood.'


While Mom and the kids were on the trail walk, I made Brandan's birthday cake! He requested a cookie dough cookie monster cake this year. I made him a fluffy vanilla cake with a milk soak, cookie dough filling, and a creamy vanilla custard buttercream. I decorated with fondant, buttercream, mini chocolate chips, and cookies!

Twins' 12 Month Update (Siobhan)

~12 Months~

Baxter and Cade, you are 12 months old! I cannot believe that a year has gone by already. You are growing up way too fast! You both run around our house now, getting into lots of trouble together. We are sure that you two know how to communicate, and you love playing with each other. Your friendship is growing every day, and you are already the best of friends. We love you both so much and cannot imagine living without our little Thing 1 and Thing 2!

Pancakes, Lupines, and the Basin (Siobhan)


 ~Pancakes, Lupines, and the Basin~

This past week we went with a group of friends to the White Mountains. We stopped for breakfast at Polly's Pancake Parlor, visited the Sugar Hill Sampler, went on a Lupine and Poetry Walk, and then we headed over to the Basin. It was a fun day!
 First we had breakfast at Polly's Pancake Parlor. We had never been before, and we really enjoyed it! Shaila and Connor got waffles, Mom and I got omelets, and Ethan and Aidan tried their 'Panwiches.' Shaila's favorite part was the crazy amount of whipped cream on her hot chocolate and her waffle 😉
Next we stopped at the Sugar Hill Sampler. It is a big barn that was converted into a beautiful museum and gift shop.
Afterwards we went on the Lupine Walk, which is right across from the Sampler. Unfortunately the lupines were not all blooming when we went, but the walk was still very pretty! Below is a picture of what the trail looks like when the lupines are blooming:
After our lupine walk, we went to the Basin! We love going to the basin for swimming or picnics. It was definitely too cold for swimming, so we just enjoyed the beautiful scenery!

Panwiches (Siobhan)


~Panwiches~

Last week our family went to the White Mountains. On the way we stopped to get a delicious breakfast at Polly's Pancake Parlor. The breakfast was SO good, and one of the items on the menu was a 'panwich.' Ethan and Aidan tried and loved it, so we decided to recreate panwiches at home. Panwiches are just sandwiches made out of pancakes! They are so easy to make and taste amazing.
 To make panwiches, you need pancakes! We chose this buttermilk pancake recipe. The buttermilk is essential for  perfectly light, fluffy pancakes. Just mix your dry and wet ingredients separately and then gently combine them. The key to avoid dense pancakes is not overmixing your batter. Stop mixing when there are no big streaks of flour. Lumps are totally fine! I like to let my batter sit while the griddle preheats so it gets nice and bubbly.
 Panwich pancakes should be BIG! I used a very generous 1/3 cup full of batter per pancake.
The panwich fixings are up to you! We put in a fried egg, a piece of sausage and some cheese. Then we drizzled maple syrup over the top. These are SO yummy!
