Apple Cinnamon Spice Cupcakes By: Siobhan

Hello Everyone!
Today I have a delicious recipe I found on http://www.foodnfocus.com . I have loved every recipe I've gotten off of the site and subscribe to her weekly emails. It's for Apple Cinnamon Spice Cupcakes with Apple Pie Filling and Caramel Buttercream. It tasted as good as it sounds. It is a bit time-consuming so allow a couple hours for everything.
 Here are the ingredients:
  • 1 box Spice cake mix (I couldn't find a spice cake mix, so I used a Classic Yellow Pillsbury)
Apple Pie Filling:
  • ½ cup water
  • ½ tablespoon apple juice, apple cider, or lemon juice (I used lemon juice)
  • ½ cup sugar
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground clove
  • ⅛ cup cornstarch
  • ¼ tsp vanilla
  • 2 cups apples, cored, peeled, and chopped
Caramel Buttercream:
  • ⅓ cup shortening
  • ⅓ cup butter
  • ⅓ cup caramel ice cream topping
  • 1 teaspoon vanilla
  • 4 cups confectioner’s sugar
 
 Step 1: Prepare your (cup)cake mix. Let cupcakes cool.
 Step 2: Cut up apples into tiny pieces.
 Step 3: Place apples in boiling water for 4-5 minutes until tender and not at all crunchy.
 Step 4: Drain (My apples got a little too soft, but they tasted fine)
 Step 5: While the apples drain, mix water, sugar, cinnamon, nutmeg, clove, and cornstarch. Bring to a low boil.  Mixture will thicken. Add apples and vanilla.
Step 6: Let cool.
 Step 6: Core cupcakes. I didn't have a cupcake corer, so I took my 1M Wilton Decorating tip and pushed the circular end (NOT the tip) into the cupcake.  It worked really well. You're going to want to push in deeply.
 Step 7: Scoop as much filled as fits into the cupcakes.
 Step 8: Whip together butter and shortening. Add caramel and vanilla and whip until well combined. Add confectioner's sugar, 1 cup at a time and mix until well blended. Add frosting until it is stiff, but not too stiff to pipe.
 Step 9: Pipe frosting onto cupcake (I used my 1M tip) and drizzle with additional caramel.
