Pumkin Oatmeal Cups From: *Stella's Kitchen

Hello Readers!

I have another recipe to share with you this week.  It is very simple and has a delicious result!
We love these for either a yummy breakfast, or a lunch with some eggs or something like that.  We make them once a week.
 Ingredients:
1 15 oz. can of pumpkin
1/2 cup vanilla almond milk (I usually just use regular.  It tastes about the same ;)  )
2 eggs
1 tablespoon baking powder
3 cups oats (technically you are supposed to use old fashioned, but I always use quick oats and they work fine)
1 tablespoon pumpkin pie spice
1/3 cup brown sugar
Chocolate Chips (however much you prefer ;) )

1.  Preheat oven to 375 degrees.
2.  Mix all the ingredients together.

3.  Get muffin tins and spray with nonstick spray.*
4.  Put muffins in oven and bake for 20-30 minutes.
*Note: Though you are putting them in muffin tins, the texture will NOT be like muffins.  Once you mix everything together, you may be a little concerned about how thick it is, but keep this in mind.
