Original Nilla Banana Pudding From: *Stella's Kitchen*

Hello All!

I haven't posted a recipe in...well, let's just say a long time!
We made a really yummy recipe the other day and I wanted to share it with you.  I found it on the side of a Nilla wafers box and since we had milk and eggs to use up (and are always looking for fun new recipes to try ;) ) we decided to try it.
So, enough talk.  Here is the recipe!  If you decide to try it-let us know how it turns out!
Ingredients:
3/4 cup sugar, divided (1/2 cup and 1/4 cup)
1/3 cup flour
dash salt
3 eggs, separated
2 cups milk
1/2 tsp. vanilla
45 Nilla Wafers, divided (33 and 12 wafers)
5 bananas, sliced

1. Heat oven to 350 degrees.
2. Mix 1/2 cup sugar, flour, and salt in top of double boiler.  (We didn't have a double boiler so we just put two pots on the stove, one on top of the other)
3. Blend in 3 egg yolks and milk.  Cook uncovered over boiling water for 10-12 minutes or until mixture is thickened. (We used real cow's milk in this, so our custard came out really nice and thick because the cream wasn't skimmed off the milk!)
4. Remove from heat and stir in vanilla
5. Keeping the 12 wafers for garnish, spread small amount of custard on the bottom of a 1 1/2 quart baking dish.  Cover with layers of 1/3 each of the remaining 33 wafers, bananas, and custard.  Repeat layers two times.  You will end with the custard.
(This is about how thick the bananas should be)
6. Beat egg whites on high speed of mixer until soft peaks form.  Gradually beat in remaining sugar until stiff peaks form.  Spread over custard sealing well to the edge of the dish.
7. Bake 15 to 20 minutes or until lightly browned.
8.  Just before serving, top with remaining wafers (and if you'd like some more banana slices)
The recipe said to cool only slightly, but we baked this around lunch time and served this for dessert.  We let the custard cool, and then we chilled it in the fridge until we were ready to serve it.
