Central and South American Cantina (Siobhan)

                                                   

~Central and South American Regional Meal~

This may be one of the best regional meals we have had, and we have cooked quite a few of them over the years!! We loved the variety of foods and the incredible flavors. The kids did a fantastic job and learned so many fun cooking techniques. Recipes are linked below!
Mexican Sodas, Peruvian Ceviche, Corn Chips, Salsa, Chunky Guac, Dragonfruit and Rose Salad, Cornbread, Refried Black Beans, Dirty Rice, Anticuchos with Tropeior Beans, and Brazilian Chocolate Truffles
Owen loved the dragonfruit!

Back to School 2020 (Siobhan)

                               

~First Day of School~

Today is our first day back to school! It's hard to believe the 2020 school year is upon us. Ethan and I start classes at UAH on Wednesday, so we have all been working hard to start this semester strong amid the COVID craziness. We aren't sure exactly how school will look this year, but we are excited to get back into classes.

Of course, every first day of school has to start out with some laundry and new chore cards! Owen is happy to help :)

Brandan's back to school present was a coonskin cap. Ever since we visited David Crockett State Park, he has been loving learning about Davy Crockett and was thrilled to get a cap like his.

The twins couldn't be more excited to start preschool again!
After a very full orientation day, the kids celebrated by making a delicious Ethiopian regional meal! We had Sega Wot (stew beef made by Aidan), Doro Wot (chicken made by Connor), Injera (flatbread made by Shaila), Misir Wot and Gomen Wot (red lentil stew and spinach made by Siobhan), and Malva Cake with ice cream (made by Shaila!) Everything was incredible, and all the recipes are linked above.
A new year of science means a fun back to school cell cake! Complete with candy mitochondria and cupcake vacuoles...

I think Owen summed up our back to school thoughts perfectly 😂

Southern Regional Meal 2017 (Siobhan)

~Southern Regional Meal~

This weekend we cooked our Southern Regional meal for geography. We had the same meal we made last time we studied the south, because our southern recipes are so delicious! As always, recipe links and printables are throughout the post :)
 Our main dish was an herb and spice southern fried chicken. It is our go-to fried chicken recipe!
 For our first side dish, we made Southern Candied Sweet Potatoes.
 Next we made cheesy cream corn
For dessert we had bittersweet chocolate pecan pie. And of course we had to serve it with a big scoop of vanilla bean ice cream!

Mid-Atlantic Regional Meal 2016 (Siobhan)


~Mid-Atlantic Regional Meal~

We finished our second region in geography: the Mid-Atlantic. We had fish as our main course this month, and we had some very yummy side dishes and dessert!

We had two types of fish: maple glazed salmon and parmesan tilapia.

Dessert was a sweet potato pie with marshmallow meringue. It was incredible! Everyone was very skeptical about sweet potato pie, because we are huge pumpkin pie lovers, but it was SO good.

New England Regional Meal 2016 (Siobhan)

~New England Regional Meal~

We finished our first region in geography, and that means we did our first regional meal! This week's region is New England. As always, I took lots of pictures. Scroll down to the end for a link to all of our regional meal posts!

 Our main course was our Dry Rub Pork roast. It was delicious! We made it in the slow cooker, so it was very simple to prepare. In the morning, we chopped some onions, put the pork on top, added the rub and let it cook all day until dinner.

These roasted winter root vegetables were delicious! They were also made in a crockpot.

This brown bread recipe was so easy (it's a no-yeast bread), and we loved it. I was worried about the batter consistency, because it was extremely runny, but it turned out fine. We spread it with butter and drizzled a little honey on top.

We made apple dumplings for dessert. We topped them with french vanilla ice cream, chocolate sauce, caramel sauce, and whipped cream.

Italian Regional Meal (Siobhan)

~Italian Regional Meal~

We decided to do an Italian regional meal for our Mediterranean region. As always, we took a lot of pictures to share with you. I'll have the recipe links throughout the post as well, in case you want to try any of them out. :)
Everyone cooked and prepped over our lunchbreak! 
Leo and Rus made Caprese Salad with Mom. We served it with some crackers.
Mom made Focaccia Bread with Tert and Filia ((recipe coming soon))
Leo and Rus made minestrone soup

Elim and I made a Supersize Meat Lasagna. This was enough lasagna for three meals!

For dessert we had cannolis and ice cream.
