Dark Chocolate Peppermint Biscotti (Siobhan)

~Dark Chocolate Peppermint Biscotti~

This year for Christmas I decided to try making biscotti. I made two types-dark chocolate peppermint and lemon white chocolate. This dark chocolate peppermint recipe was my favorite. They are very time consuming, but definitely worth it! Here is the recipe...

Ingredients

  • 2 cups all-purpose flour
  • 12 cup unsweetened dark cocoa powder (I like to use Hershey's)
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 34 stick (6 tablespoons) salted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 12 teaspoon peppermint extract
  • 1 cup dark chocolate chips
  • 1 tablespoon powdered sugar
  • optional:
  • ounces, weight semi-sweet chocolate and/or white chocolatemelted
  • 12 cup crushed finely crushed peppermint or chopped andes mints
In a medium-sized bowl, whisk together the flour, cocoa powder, baking soda, and salt.
 In another medium bowl, beat the butter and granulated sugar until the mixture is light and fluffy. Add eggs and beat until completely combined. Add peppermint extract until completely combined.
 Stir the flour mixture into the wet mixture until it forms a stiff dough. Add chocolate chips until fully combined.
 Flour your hands, divide the dough in half, and form two logs. Each should be about 12 inches long, and slightly flattened. Sprinkle with powdered sugar.
 Bake in a 350 degree oven for 35 minutes or until slightly firm to the touch. Cool on the baking sheet for minutes.
 Transfer logs to a cutting board and cut diagonally into 3/4 inch slices. Arrange cut side down on baking sheet and bake for 10 minutes or until crisp.
 Cool completely on a baking rack.
Next I had Rus and Leo help me crush peppermints. We dipped both sides of the biscotti into white chocolate chips (I used my Wilton Candy Melting Pot for this) and then sprinkled crushed peppermint over each end.
 Next I packaged the biscotti in Wilton Pretzel Treat Bags. These biscotti froze really nicely. I made them a few weeks before Christmas, and they thawed in just a few hours.
I added these labels to make the biscotti look a little more festive!
